Idli is a very healthy and tasty breakfast dish in India. But making it requires a lot of time and patience. It is not something that you can prepare and eat instantly. It will take you at least 8 hours to prepare the batter from scratch. There are instant batter options available in the market but it’s not just as satisfying. Oats idli is the perfect solution to it. Prepare your idli the old fashioned way but without the idli batter’s tension by following this recipe.
Makes: 15 idlis
What You Need:

· 1 cup oats
-
· ½ cup rava
-
· ½ cup curd
-
· 1 cup of water
-
· ½ tsp lemon juice
-
· ½ tsp baking soda
-
· Salt to taste
-
· 1/3 cup of grated carrot
-
· 3 tsp chopped coriander leaves
-
· ½ tsp oil
-
· ½ tsp mustard seeds
-
· ½ tsp cumin
-
· ½ tsp urad dal
-
· ½ tsp urad dal
-
· 1 tsp chana dal
-
· A pinch of asafoetida/hing
-
· ½ tsp black pepper powder
-
· 1 to 2 chopped green chilies
-
· 1 tsp finely chopped curry leaves
-
· 1 tsp chopped ginger
-
· 8 to 10 cashews
-
· 1 to 2 tbsp grated coconut
What to Do:

Blend the oats n a blender to a fine flour.

Heat oil in a pan and add the mustard seeds, cumin, urad dal, chana dal, and stir till they become golden.

Then add the green chilies, curry leaves, ginger, asafoetida and saute for about a minute.

Add the rava to this mixture and saute it for two more minutes.

Add the oats flour and keep roasting it for four to five minutes.

After it is roasted, let it cool down completely, and then add the carrots and the coriander.

Add the curd to the mixture and water and stir it to a medium consistency. Let it sit for 5 to 6 minutes.

Add the salt and stir again.

Add the baking soda and quickly stir the entire batter thoroughly.

Heat water in the idli steamer and grease the moulds with oil.

Pour the batter into the mould using a ladle.

Put the mould in the cooker and cook it for 10 to 12 minutes.

After the idlis are cooked, take the mould out of the cooker and let it stay for 4 to 5 minutes.

Dip a spoon in hot water and use it to scoop the idlis out.

Serve with sambar or chutney.
Notes:

· You can use any other vegetables you wish along with the carrot.

· Check with a toothpick to see if the idli is cooked.
