Paneer Kofta Curry
Paneer Kofta Curry is an amazing dish in which deep fried balls (koftas) made with potato and paneer are dunked in a creamy spiced velvety smooth curry.
Ingredients
1 Bowl Boiled Potato
1 Bowl Paneer
1 Bowl Tomato Puree
1 finely Chopped onion
Cashew paste (you soak some cashews in water and make paste of it)
All basic masalas
Kofta Preparation
- We take 1 Bowl of boiled and grated potato in a bowl.
- We add 1 Bowl of grated paneer
- To this we add the masalas, 1 ½ tsp of chilli powder, ½ tsp turmeric powder, 1 tsp of garam masala and salt according to taste.
- To bind this all together, we add 2-3 tbsp of gram flour (besan) to this and mix it all well together.
- Grease your hands and make small round balls from this dough and coat it with Maida (all-purpose flour) and put it in oil to deep fry it. Similarly, we add all the other koftas into the oil.
- We fry these koftas until they are well cooked and are golden brown in colour.
- Once they are golden brown, we remove the koftas from the oil and let it rest aside.
- Crispy golden koftas are ready and they are very tasty.
Kofta Gravy
- We take 1tbsp oil in a wok and add 1 tsp of cumin seeds, 2 green cardamom, 2 cloves and couple of bay leaves.
- Once the aroma is released, we add the finely chopped onion and fry it.
- To this we add 1 tsp of ginger garlic paste and fry the onions until well cooked and golden brown.
- We add 1 cup of tomato puree to this and mix it well.
- We cover the wok and cook it well. After about 5-10 mins, we add the masalas to this.
- We add 1tsp of chilli powder, ½ tsp of turmeric powder, ½ tsp of cumin powder, 1 tsp of coriander powder and ½ tsp of garam masala and some salt according to taste and mix it well.
- We cover the wok and cook it in medium heat until the tomato is well cooked and reduced.
- The oil separates from the tomatoes, we add the cashew paste to this and mix it well. This gives it a bit of creamy texture and flavour.
- We add sufficient water and mix it well.
- To this we now add the fried golden koftas and cover the wok to cook it for a while
- Once the koftas are well cooked for about 5-10 minutes in the gravy, in the end we add ½ tsp of garam masala and some kasuri methi to this.
- Mix it well and let it rest. Optionally, you can add some fresh cream and mix it.
- Paneer Kofta is ready. Serve it hot with Roti, Parantha or Rice.
