Ingredients

Capsicum (green bell pepper)
1 cup boiled and mashed potatoes
1 cup of finely chopped and half boiled/cooked carrot
1 cup of finely chopped and half boiled/cooked cauliflower
1 cup of green peas
Gravy
1 finely chopped onion
Fresh tomato puree
Basic Spices

Instructions

Stuffing

  1. We take 4 green capsicums and cut it through the stem as shown and take out all the seeds and make it hollow.
  2. We make sure that the stem is covering the capsicum and we do the same to all the capsicum s
  3. For the stuffing we take 1 bowl of boiled potato, 1 cup each of finely chopped and half boiled carrot, cauliflower and green peas. We make sure that they are semi cooked.
  4. To this we now add some salt according to taste and some masalas.
  5. We add ½ tsp of turmeric powder, 1tsp of chilli powder, 1 tsp of coriander powder, ½ tsp of chaat masala or Aamchur powder and optionally some finely chopped green chillies
  6. We mix all of this together to get a smooth and consistent mixture. This will be our stuffing for the capsicums
  7. Once we have prepared the stuffing, we will take the capsicum and fill it with this veggie filling. We fill it completely and cover the opening with the stem as shown and fix it using a tooth pick to make sure the stem doesn’t move while cooking.
  8. Similarly, we fill all other capsicums

Gravy

  1. We take 1tbsp oil in a WOK and add the finely chopped onion to this and sauté the onions
  2. To this we add 1tbsp of ginger garlic paste and continue to fry it.
  3. Once the onions are well sautéed, we add the fresh tomato puree to this and mix well.
  4. We add 1tsp of chilli powder, 1tsp of coriander powder, turmeric and salt according to taste and mix it all together.
  5. We cover the wok and reduce this gravy to a thick gravy. Once it gets too thick, we add the stock water in which we boiled the other veggies. Depending on your preference you can add water.
  6. We add the capsicum to this as shown and cover the capsicum with the tomato gravy as shown.
  7. We cover the wok and let the capsicum cook. Every now and then we remove the lid to cover the capsicum again with the tomato gravy.
  8. Once the capsicum is well cooked and the gravy is reduced, we will remove it from the heat.
  9. Serve it hot with Naan or any other bread. Stuffed Capsicum is ready! Bon Appetite.
