Quinoa is a very healthy meal option. It is rich in proteins, dietary fiber, B vitamin and thus will provide you with all the energy you need. It has incredible health benefits, and most of the quinoa dishes are surprisingly easy to make. So whether you are trying to eat healthily or simply want a change in your regular meal routine, this recipe is a great one to try.
Boil the quinoa in 2 cups of water on a medium-high flame and let it boil for 15 minutes till all the water is absorbed. Then let it rest for 5 minutes.
Take a large bowl, add the chickpeas, bell pepper, cucumber, onion, and parsley. Mix them well and set them aside.
In a smaller bowl, mix well the olive oil, lemon juice, vinegar, garlic, and salt.
Once the quinoa cools down and is a little fluffed up, add it to the large bowl with the vegetables and chickpeas.
Spread the dressing from the smaller bowl on top of it and mix it well.
Let the salad rest for five to ten minutes.
·You can store this salad in the refrigerator for about 4 days.
·You can also add a little grated cheese or nuts on top for garnishing.
